Fresh Tomato Pie

INGREDIENTS:

  • 9″ pie shell
  • 7 ripe tomatoes, sliced
  • 1 yellow onion, sliced thin
  • 3/4 cup mayonaise
  • 1/3 cup shredded mozzarella cheese
  • 1/3 cup grated parmesan cheese
  • fresh basil, chopped
  • salt and pepper to taste

INSTRUCTIONS:

  1. Bake pie shell in a pie pan at 450 degrees for 10 minutes.
  2. Remove the pie shell and reduce the oven temperature to 350 degrees.
  3. Slice the onion and tomatoes.
  4. Build the pie in layers, rotating between:
    1. Onion
    2. tomato
    3. salt and pepper
    4. basil
  5. Repeat the layers until all the ingredients are used.
  6. Combine mozzarella, parmesan and mayonaise in a bowl.
  7. Spread the mixture evenly over the tomatoes.
  8. Bake at 350 degress for 30 minutes.
  9. Garnish with more basil.
