Makes one small loaf (6 servings)
INGREDIENTS:
- 3 ripe bananas (ripe bananas have darkened skins and soft fruit)
- 1 stick (1/2 cup) salted butter, melted
- 1/2 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- salt, to taste (1/2 teaspoon)
- 1 1/2 cups plus 2 Tablespoons all-purpose flour
- 1/2 cup Ghirardelli semi-sweet mini chocolate chips
INSTRUCTIONS:
- Preheat oven to 350˚F (180˚C).
- In a bowl, add the bananas and mash until smooth. Add in the melted butter and stir until well combined.
- Add the sugar, egg, vanilla, baking soda, salt, and flour, and stir until the batter is smooth.
- Add in the chocolate chips and pour the batter into a greased 1lb. (8 1/2 x 4 1/2 x 2 1/2 inch) loaf pan.
- Top with additional chocolate chips.
- Bake for 50 minutes to an hour, or until a toothpick comes out clean. Or until a thermometer in the center reads 190 degrees Fahrenheit.
- Cool completely before serving.
