Blueberry Muffins

Makes 12 muffins

INGREDIENTS: 

  • ½ c. milk
  • 1/4 c. salad oil
  • 1 egg, slightly beaten
  • 1½ c. flour
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 3/4 to 1 c. blueberries (fresh or frozen)

INSTRUCTIONS: 

  1. Mix milk and shortening with milk.
  2. Sift dry ingredients together
  3. Add to milk mixture.
  4. Blend in blueberries.
  5. Bake in greased muffin pans at 400 degrees for 20-25 minutes.
