Carmel Corn

INGREDIENTS:

  • 6 quarts of popped corn
  • 1 Cup butterĀ (2 sticks)
  • 2 Cups brown sugar (firmly packed)
  • 1/2 Cup corn syrup
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla

INSTRUCTIONS:

  1. Preheat Oven to 250.
  2. Coat a roasting pan with PAM.
  3. Place pre-popped corn in roaster.
  4. Slowly melt butter in a saucepan.
  5. Stir in brown sugar.
  6. Stir in corn syrup.
  7. Stir in salt.
  8. Stir continuously until boiling.
  9. Boil 5 minutes without stirring.
  10. Remove from heat.
  11. Stir in baking soda.
  12. Stir in vanilla.
  13. Pour mixture over corn and stir.
  14. Place corn in oven for 1 hour stirring every 15 minutes.
